What is/are Doujinshi? Doujinshi (aka doujin or dj) are essentially Japanese fan comics, but these are generally much more professionally published than any you would find in America since the Japanese publishers don't seem to find it objectionable that they're kinda copyright infringing. Doujinshi aren't JUST fan renditions of existing characters however, many feature original stories and characters, just like manga. Many Doujinshi are just as nice as regular manga (although generally shorter), and there is a large market of them so they are fairly easy to get- almost as easy as regular Japanese manga. They can get more costly in some cases however, since they generally have smaller print runs and certain artists or series are fairly popular.
Doujin can vary greatly in style from close to the series they drew their characters from or more in the style of the doujin artist (I enjoy seeing characters drawn differently sometimes!) Some are done by individuals, and some by groups (also called circles.) A couple have become quite famous that way! Even some well-know manga artists have done doujin at some point in their life (I'd love to get my hands on some of Yun Kouga's doujin!) They also sometimes use different colored or textured paper, or are made an unusual size (smaller or larger than standard manga size), so that makes them kind of neat! Their themes can also range greatly from taking a part of the series and developing it in a new (possibly just implied) story, or putting those characters in an entirely new situation. Some develop and explore relationships between characters not in the original series. Hentai (sexual),  yaoi (gay boy), and yuri (gay girl) doujinshi typically just pair various characters together in sexual situations, with varying degrees of actual plot (tho generally the more explicit it is, the less plot there is.)
If you want to get doujinshi of your own, probably the easiest thing to do is hunt down some online stores that have a large inventory of them, I've seen a couple based in Japan where the shipping isn't too bad and the doujin and mana were cheap (plus you could get used ones even cheaper!). I used to recommend ebay, but sometimes they're weird about doujinshi auctions so not as many people sell there as used to, and they tend to be more expensive. There are also several anime stories that carry a decent selection, but it seems like more anime-focused stores don't have much. If you get to go to an anime-related convention its always worth browsing around. Sorry I don't know the names of any stores offhand, but I'm sure they'd show up fairly easily in a web search.

These doujinshi below are the few in my personal collection and are all about PG-13 rated or under, I've noted anything objectionable if its there. I generally just get ones of series I like with art I think looks nice. I don't buy many as I generally don't like to spend too much money on them (the nice ones can get quite expensive) but I wanted to share what I had with others since I am fortunate enough to have a scanner. My most recent ones are toward the bottom. Sorry some of my older scans aren't as nice as my newer ones, I didn't originally really know what I was doing back then and was using a crappy school scanner instead of my own. I know how to make them and fix them up better now. Note that I go by actual page numbering if its there, and in some doujin they count the cover as page 1, inside cover as page 2 (even if its blank), and then the first page as page 3, which is why a doujin may not begin on page 1.
DO NOT steal any of my pictures for your page without my permission! I did work hard on scanning these so you're welcome to link to my webpage though. If anyone can do any translations for me, or even give me a better ghist of what is going on, I'd really appreciate it! I'm afraid I don't have hardly any skill at reading Japanese.
If you have a doujinshi you have nice scans of and want hosted here feel free to let me know, I wouldn't mind expanding my gallery here. I guess if you don't have a scanner if you felt like really trusting me you could mail it to me and I could scan it, but otherwise I don't know how to help you there. You do kind of have to kill the binding to get proper scans if its thick.

Sylph (By: Twin-Fuzz)
Yu Yu Hakusho- Hiei, Kurama, and others?
1993; 41 pages, 2 stories
warnings: Medium shounen-ai/yaoi (boy love), some nudity but nothing graphic

I got this doujin off of ebay because I liked the cover ^_^. There are two stories that maybe are or aren't by the same artist, but are at least similar styles. The first is page 9-12 (which is scanned here), and is a short strange and silly story involving Kurama, Hiei, and some jam. The second one, page 15-35 (which I didn't scan and probably won't unless someone REALLY wants me to), appears to be more serious and the style vaguely reminds me of Vampire Princess Miyu. It involves Hiei and a couple other characters which I didn't recognise. The rest of the pages are just random drawings and stuff about the artists.

KoGeMaRu (By: Meetarow)
Vision of Escaflowne- Dilandau, Van, Jajuka, Allen
1998; 42 pages, 1 story
warnings: Mild shounen-ai (boy love)

I bought this one because it was so pretty and Dilandau looked so cute on the cover. The pages are all a tan-brownish color so that's not a mistake of my scanner. The story primarily revolved around Dilandau and Van, but Jajuka and Allen are also in the story. I really can't tell much of what's going on. The boys appear to be younger and in some sort of school together. Van has this shy crush on Dilandau and has a dream about him. The illustration style is very nice but the hands and feet are kinda weird. Sorry there is a change in the color a bit after page 27- I started scanning it a while back and then picked up the project again once I got my own scanner, so they came out differently. Thanks to Nolan at yaoiboys.com for spurring me to finish it all.

Escaflowne Anthology (By: Various artists)
Vision of Escaflowne- pretty much all the characters
1997; 182 pages, 22 stories
warnings: Nothing particularly objectionable

This is actually an official anthology published by Asuka (you should know them from a lot of manga, like Fushigi Yuugi!), and I was very lucky to get it for as cheaply as I did much less at all! All the artists here have published manga of their own, and did a great job! The first couple pages are just nice color illustrations, and the rest varies in style with each story. Almost every character gets some time in, and the story themes range from sad and pensive to outright hilarious! Page 2-6 is the illustration gallery, 7-8 is the table of contents, and 176-182 is a little about each artist. I used double stars to separate sections or stories. Sorry this isn't all scanned yet, what's there is all I have, but I'm working at it and will put more up as I get to it.

Waga Inochi Kurama (By: Siawasenara Iijanai)
Yu Yu Hakusho- Kurama, Hiei, Yuusuke, others?
1994; 34 pages, ? stories
warnings: Nothing particularly objectionable
original size: 8 1/4 x 6 inches

I'll admit it, I picked this one up because of the cover. I'm a total sucker for Kurama in (yoko) foxy form, but I though it was adorable having normal Kurama with fox ears. Not as much of him in it as I'd hoped though. Still a cute doujin, I think its mostly gag and partly random story- can't make out too much of what's going on. There's a lot of short panel sections. The last couple pages are randomly on a bright green paper. Haven't gotten to scan the rest yet, will be working on it.
